As the temperatures soar, we try to spend as little time as possible in the hot kitchen. These chicken lettuce wraps are a new favorite in the Cheer Up Buttercups kitchen. Light, refreshing, and healthy these scream summertime and come together in a pinch. This family favorite recipe appeals to all- kids will love building their own wraps and adults will love being able to jazz up their dish with accoutrements such as cilantro, red pepper and green onions. Roasted peanuts, sprouts, and pineapple have also made an appearance at our table as toppers. What other toppings will your family include?
Mango Chicken Lettuce Wraps
Ingredients:
1/2 tbs sesame oil (can use coconut oil)
1 pound ground chicken
3 tbs tamari or soy sauce
3 1/2 tbs rice vinegar
2 tbs raw honey
1 tbs grated fresh ginger
1/2 tbs minced fresh lemongrass
1 large ripe mango, peeled, pitted and chopped; divided
12 small butter lettuce leaves
1/4 cup chopped red bell pepper
2 tbs sliced green onion tops
2 tbs freshly chopped cilantro
Directions:
Heat sesame oil in a medium skillet over medium heat. Add chicken and cook, stirring frequently, until lightly browned. Stir in soy sauce, vinegar, honey, ginger and lemongrass. Finely chop half the mango and add to the skillet. Cook for 5 minutes or until sauce is very thick; let cool.
Spoon chicken into lettuce leaves and top each with remaining mango, bell pepper, green onion and cilantro.
